A lasagne is a popular dish for Brits, often seen as the perfect weeknight meal. Lasagne is a timeless comfort food that combines layers of rich, flavourful ingredients in every bite, but the original Italian recipe can take hours to make, as it includes making a time-consuming bolognese sauce and a white souce. Mary Berry’s lasagne recipe is a perfect example of how traditional dishes can be elevated with simple, high-quality ingredients, yet it won’t take too much time to make.

Her take on this Italian classic ensures a perfectly balanced sauce, tender pasta, and a golden, bubbling cheese topping. Speaking about this "express" recipe, the BBC website read: " Mary Berry's wonderfully different take on lasagne is super quick, perfect for a midweek supper." Whether you’re a seasoned cook or a beginner in the kitchen, Mary’s recipe makes it easy to create a memorable meal.

You should first start by preheating your oven to gas mark six and lining an ovenproof dish with butter.

Next, soak the lasagne sheets in recently boiled warm water to soften while you get your sauces ready.

There will be two sauces for this recipe, with the first one involving pork and spinach.

Heat up some oil in a large pan and then brown the sausage meat off for five to 10 minutes.

Break up the mince with two wooden spoons and then sprinkle in some flour and fry for a minute.

Next, add in the garlic, chilli and mushrooms and fry for five minutes, you should then stir in the crème fraîche and spinach.

Bring to the boil and allow to bubble for a couple of minutes before seasoning with salt and pepper and setting aside.

Next, you’ll want to prepare your tomato sauce, make sure to mix all the ingredients together in a jug or bowl and season well with salt and pepper. After this, you need to drain your lasagne sheets.

You should then spoon one third of the spinach sauce onto the base of the dish and then spoon a third of the tomato sauce on top. Place half of the lasagne sheets over the tomato sauce and repeat.

Finally, sprinkle over your grated cheese and bake for 30 to 35 minutes until golden brown. You’ll be left with a delicious lasagne to serve for your week night meal or to your friends and family.

A full list of ingredients you’ll need:

  • Butter

  • Six large dried lasagne sheets

  • 75g mature Cheddar cheese

  • One tbsp oil

  • 450g pork sausage meat

  • One tbsp plain flour

  • One red chilli

  • Two fat garlic cloves

  • 250g chestnut mushrooms

  • 200ml oz full-fat crème fraîche

  • 100g baby spinach

  • Salt and freshly ground black pepper

  • 500g passata

  • Two tbsp sun-dried tomato paste

  • One tsp light muscovado sugar

  • One tbsp chopped fresh thyme leaves

  • One tbsp chopped fresh sage
