Chicken mayo is much tastier on sandwiches if you add 2 simple ingredients

Chicken mayonnaise is a delicious sandwich filler, but sometimes the store-bought version can feel very heavy or even greasy. If you want to make even tastier chicken mayo, then it is incredibly easy to make yourself, as long as you stop using too much mayonnaise.

Izzah Cheema, a cook and founder of Tea for Turmeric, has shared that only using mayonnaise as a base for this filling will overpower the flavour. She said, “I love a luxuriously creamy Chicken Sandwich. But overtly mayo-heavy sandwiches taste somewhat offensive. We know sour cream balances the mayo beautifully, but a bit of cream cheese really amps up the creamy flavour.”

Mayonnaise has a tangy flavour, and using too much can drown out the taste of the chicken as well as any other ingredients you add to your sandwich.

It also ruins the taste and gives the sandwich a strange, soupy texture that is not very appetising to eat.

Mixing in sour cream and cream cheese gives the chicken mayo a much lighter texture and also helps make it a little firmer, so your sandwich will be able to hold its shape.

You will still have a creamy filling, but it has a much better balance of flavours that will add to the chicken rather than take away from it.

Izzah added: “These creamy elements, along with the lemon, dijon, and peppery seasoning, make the dressing perfectly balanced — savoury, tangy, with just a hint of spice.”

Instructions

To begin, poach the chicken by placing it in a pot and covering it with water. Add the stock, stock cube and season with salt and pepper.

Place on a high heat to bring the water to a boil, then reduce to medium and allow to simmer for 25 minutes until the chicken is fully cooked through and the water has evaporated.

Make sure to remove any scum that begins floating on the surface, and keep stirring the chicken towards the end of the cooking time to stop it sticking to the pot. If the chicken is almost cooked and there is any water remaining, increase the heat until it is gone.

Once the chicken is ready, place the chicken and leftover juices into an electric mixer bowl with a paddle attachment. Turn on a low-medium speed and wait two minutes until the chicken has fully shredded. Alternatively, you can place the chicken in a bowl and shred it with two forks without a mixer.

Then, simply add all the mayonnaise ingredients to a bowl. Mix everything and then pour it over the shredded chicken. At this stage, you can add any other sandwich toppings you wish, like onions, cucumbers, cheese, etc.

Your chicken mayonnaise is now ready to eat and spread onto sandwiches for a tasty lunch or picnic.
