A roast beef joint is the perfect meat for a delicious Sunday lunch. Yet, achieving that perfectly soft-cooked meat while keeping a nice brown outside can sometimes be difficult. However, there is a method that "guarantees tender, juicy meat" and will surely impress the whole family.

This "foolproof method" by BBC Good Food requires just 10 minutes of preparation and involves roasting the beef for a few hours. Although this may seem long, patience is key, and the cooking time is well worth the wait. The quick prep time also means you can get on with other things while you wait for the tasty joint to roast.

Ingredients:

  • 2kg sirloin of beef joint, boneless, fat trimmed (leave a thin layer on), rolled and tied

For the flavoured butter (optional)

  • 4 anchoby fillets, chopped
  • 4 garlic cloves, finely chopped
  • 1 small shallot, finely chopped
  • 2 tsp Dijon mustard
  • 1 tsp Worchestershire sauce
  • 1 tsp lemon juice
  • 1/2 tsp sweet smoked paprika
  • small handful of parsley, finely chopped
  • 200g unsalted butter, softened
