"It's all about using the best quality sirloin and good, fresh mushrooms, and seasoning simply with just salt and pepper." Start by sautéing onions and garlic in butter until translucent, then add seasoned steak and cook until browned. Stir in mushrooms and beef stock, letting everything simmer until the mushrooms are tender. In another small pan, bring some more beef stock to a simmer and whisk in some almond flour. Cook for a minute or two to remove the raw flour. Stir the almond flour mixture into the pan with the beef and let it bubble away for a couple of minutes for the sauce to thicken. Remove the pan from the heat, mix in sour cream and paprika and adjust the seasonings to taste. Then serve the stroganoff over egg noodles.
