Salmon and cannellini beans crisp up 'beautifully' using one pan




Oily fish is an important source of omega-3 fatty acids, which are essential to any healthy diet as our bodies don’t produce this naturally. Salmon in particular is a great way to load up on the healthy fats, contributing to heart health, helping to maintain skin and protect joints.

Pairing salmon with other nutrient-rich foods can make for a healthy meal that’s filling and keeps our bodies feeling fit and strong day to day. Beans in particular are a great source of a number of essential nutrients, high in fibre, protein, vitamins and minerals, and when paired with salmon, make for a highly nutritious meal that can be made quickly, especially when they come together using just one pan. Food photographer Katie Smith, who runs the TikTok account @thehumblepescatarian has shared a recipe for a salmon and cannellini bean bake that comes together using one tray popped into the oven, and is ready in just 30 minutes.

Using just five ingredients, Katie’s recipe not only makes for a nutritious and quick meal, but also an affordable one. Although salmon can be pricey, pairing it with pantry items makes it more budget-friendly.

Cannellini beans are 49p in Sainsbury’s, while courgettes can be bought for 58p in Waitrose and lemons cost 30p in Tesco, making for a low-fuss meal that Katie says still “feels fancy”.

The beans “crisp up beautifully around the edges when roasted” and act as a “total flavour sponge” for the smoky and spicy harissa paste that Katie adds to the recipe.

A staple in Tunisian, Moroccan, and Algerian cuisines, and traditionally made from red peppers, garlic and olive oil, harissa is also rich in antioxidants.

How to make harissa salmon and cannellini bean traybake

Start by preheating your oven to 200C. Add your cannellini beans and courgette slices into an oven-proof tray with the harissa paste and mix it through, making sure everything is well covered.

Add a drizzle of olive oil and the juice of half a lemon, as well as some salt and mix this in. Bake in the oven for 15 minutes, giving it a good stir before adding your salmon fillets on top of the beans and courgettes.

Cover the salmon with some more harissa, as well as the juices from the tray. Roast for another 15 minutes until the salmon is flaky and the beans are golden. Plate it up and enjoy immediately.
